Lavender biscuits (Makes approx. 50 small biscuits)
Place 300g of flour, 140g of butter (at room temperature), 140g of sugar, 2 eggs, a teaspoon of honey and a pinch of salt in a bowl. Knead with your hands until the mixture reaches a smooth consistency. Then add about 3–4 tablespoons of lavender flowers, previously separated from the stems, and continue kneading to ensure the lavender flowers are evenly distributed. Add more flour if necessary.
You can use more or fewer flowers as you prefer.
Leave the dough to rest in the fridge for about 30 minutes.
Once the required time has elapsed, use a cookie cutter of your choice to shape the biscuits and place them on a baking tray lined with baking paper. Bake for about 25 minutes at 180°C to 200°C until golden brown.
