Boil 500 g of potatoes in a pan of salted water for about 40 minutes, then leave them to cool for a few minutes, peel them and mash them with a potato masher. Add an egg yolk, salt to taste, about 30 g of pecorino cheese, a few fresh parsley leaves and, most importantly, one or two finely chopped fresh chillies.
Heat some corn oil (or any frying oil) in a small saucepan; in the meantime, prepare a coating of 80g breadcrumbs and 20g cornflour. Shape the potato mixture into small croquettes, dip them first in beaten egg, then in the coating you’ve just prepared. Fry for a few minutes in hot oil and enjoy the crispiness of this recipe!
